Warm and complex, Golden Crystal Sugar comes from the Caribbean island of Barbados. Its tropical location provides the perfect amount of sunlight for growing sugarcane, and the coral-rich soils filter rainwater to produce exceptionally flavorful, coarse sugar crystals. Use as turbinado or raw sugar in beverages and baking, as a crunchy sanding sugar topping on cookies and other sweets or a rimming sugar for cocktail glasses. Barbados was the first Caribbean island to produce sugar, and this sugar represents the last remaining Caribbean coral-island sugar in production. This sugar serves as a memorial to the fraught history of sugar in Barbados and the people who created this uniquely delicious ingredient.
